These vegetarian egg muffins are made with fresh red bell peppers, shallots, tomatoes, cilantro and I too added cheddar cheese! Everything with cheese in my opinion tastes better!

Ingredients:

  1. 8 egg whites and two whole eggs
  2. A pinch of salt and pepper
  3. 1 teaspoon of garlic powder
  4. 1 teaspoon of paprika pulverization
  5. 1 small shallot chopped finely
  6. half of a red bell pepper finely chopped
  7. fresh cilantro (optional)
  8. Half of a medium tomato plant (finely chopped)
  9. cheddar cheese (to sense of taste)
  10. 2 tablespoons of almond milk (or your favorite milk)

Direction:

  1. In a mixing basin, add together the eggs, milk, salt, pepper, paprika, garlic pulverisation and whisk well.
  2. Now add together the fresh vegetables and cheese, mix well and ready bated.
  3. In a muffin baking sheet, spray with non-stick avocado spray and with a spoon slowly add together the egg mixture.
  4. Bake in the oven at 350 degrees for about 30 to twoscore minutes, or until the eggs are nicely set and cooked!
  5. Enjoy!
